Honeyed BBQ Pineapple Bowls

Ingredients

  • 1 to 1½ lbs boneless chicken breast, cubed
  • 2 tsp Honey BBQ Rub Seasoning
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 3 Tbsp Pineapple Sugar
  • 1 Tbsp rice wine vinegar
  • 1 tsp toasted sesame oil
  • 2 ea garlic cloves, minced
  • 2 tsp ginger, grated
  • 2 tsp cornstarch
  • 1 tsp Sriracha, optional
  • 2 Tbsp neutral oil (vegetable, canola, or grapeseed), divided
  • 1 ea red bell pepper, cut into strips
  • 1 ea green bell pepper, cut into strips
  • 2 tsp Cilantro
  • 2 cups cooked jasmine rice
  • 2 tsp White Sesame Seeds, toasted
  • garnish green onion, sliced
  • 2 ea pineapples, halved and hollowed, optional
  • Special Equipment: large skillet or wok

Directions

  1. Add cubed chicken to a bowl along with the Honey BBQ Seasoning; toss to combine.
  2. Mix Sauce. In a separate bowl, add soy sauce, chicken broth, Pineapple Sugar, rice wine vinegar, toasted sesame oil, garlic, ginger, cornstarch, and Sriracha. Whisk to combine; set aside.
  3. Cook Chicken. Heat a large skillet or wok over medium heat and add 1 Tablespoon neutral oil. Add chicken; allow each side to sear for 1 to 2 minutes until the chicken is cooked through and lightly golden, about 5 to 8 minutes. Transfer to a plate; set aside.
  4. Return skillet to stove over medium heat; add remaining oil. Add the bell peppers and cook until tender, about 3 minutes.
  5. Return chicken to the skillet along with the sauce mixture. Whisk the sauce again as the cornstarch will settle.
  6. Allow the sauce to come to a simmer and let cook until thickened and glossy, 3 to 5 minutes; stir in the cilantro.
  7. Toast sesame seeds in a small frying pan on low heat until lightly golden.
  8. Serve with rice. Garnish with toasted sesame seeds and green onions.
  9. Optional, serve in a pineapple bowl.
