Honeyed BBQ Pineapple Bowls

Take your tastebuds on a tropical getaway with this Honey BBQ Pineapple Bowl! Packed with sweet, savory flavors and tender chicken, it's perfect for a family dinner or a poolside party favorite.

Ingredients
- 1 to 1½ lbs boneless chicken breast, cubed

2 tsp Honey BBQ
Rub Seasoning
- 1/3 cup low-sodium soy sauce
- 1/4 cup chicken broth

3 Tbsp Pineapple
Sugar
- 1 Tbsp rice wine vinegar
- 1 tsp toasted sesame oil
- 2 ea garlic cloves, minced
- 2 tsp ginger, grated
- 2 tsp cornstarch
- 1 tsp Sriracha, optional
- 2 Tbsp neutral oil (vegetable, canola, or grapeseed), divided
- 1 ea red bell pepper, cut into strips
- 1 ea green bell pepper, cut into strips

2 tsp Cilantro
- 2 cups cooked jasmine rice

2 tsp White
Sesame Seeds, toasted
- garnish green onion, sliced
- 2 ea pineapples, halved and hollowed, optional
- Special Equipment: large skillet or wok
Directions
- Add cubed chicken to a bowl along with the Honey BBQ Seasoning; toss to combine.
- Mix Sauce. In a separate bowl, add soy sauce, chicken broth, Pineapple Sugar, rice wine vinegar, toasted sesame oil, garlic, ginger, cornstarch, and Sriracha. Whisk to combine; set aside.
- Cook Chicken. Heat a large skillet or wok over medium heat and add 1 Tablespoon neutral oil. Add chicken; allow each side to sear for 1 to 2 minutes until the chicken is cooked through and lightly golden, about 5 to 8 minutes. Transfer to a plate; set aside.
- Return skillet to stove over medium heat; add remaining oil. Add the bell peppers and cook until tender, about 3 minutes.
- Return chicken to the skillet along with the sauce mixture. Whisk the sauce again as the cornstarch will settle.
- Allow the sauce to come to a simmer and let cook until thickened and glossy, 3 to 5 minutes; stir in the cilantro.
- Toast sesame seeds in a small frying pan on low heat until lightly golden.
- Serve with rice. Garnish with toasted sesame seeds and green onions.
- Optional, serve in a pineapple bowl.
