Adobo Carrot Dip

1 lb carrots, peeled and cut into chunks
1 Tbsp. grated fresh ginger
2 Tbsp. orange marmalade
2 Tbsp. lemon juice
1 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Vik's Garlic Fix
2 Tbsp. Adobo Spice Blend
MICROWAVE the carrots, covered, until soft, about 5 mins.

COMBINE carrots, ginger, marmalade, and lemon juice in a blender and process until smooth. Blend in Extra Virgin Olive Oil until silky.

POUR into a container and stir in Vik's Garlic Fix and Adobo Spice Blend. Allow flavors to meld about 15 mins.

SERVE at room temperature or chilled. For a more intense spiced flavor, cover and refrigerate overnight.
