1 TBS Tailgater’s Spice Blend
1 TBS Smokehouse Rub
From the Grocer
1 TBS table salt
1½ lbs new potatoes, washed
5 bacon slices, thinly sliced crosswise
1 red onion, halved and thinly sliced
2 TBS white vinegar
2 TBS apple cider vinegar
¼ cup Dijon mustard, whole grain
3 TBS freshly chopped parsley
BOIL a large pot of water. Add table salt and potatoes. Lower heat to medium, and simmer 20-30 mins until tender. Drain. Allow to cool 10 mins, then cut in half. Place in a large bowl. Set aside.
HEAT a medium skillet over medium heat. Add bacon and cook until crisp, 5-8 mins. Drain excess fat.
ADD onion, Tailgater’s Spice Blend, and Smokehouse Rub. Cook, stirring often, until tender, 3-5 mins.
REMOVE from heat and stir in both vinegars and mustard until fully combined.
TOSS with potatoes and parsley. Serve.
