Thai Beef and Broccoli Stir Fry
This garlicky Thai beef and broccoli stir fry is ready in under 45 minutes. VikÃ¢Â€Â™s Garlic Fix, Coconut Thai Spice Blend, and other savory ingredients add depth of flavor and an extra kick of garlic!
1 Tbsp. Coconut Thai Spice Blend
2 Tbsp. Vik's Garlic Fix! Spice Blend
¼ cup fish sauce
1 cup white long grain rice
1 can (13.5 oz.) lite coconut milk
1 tsp. Sriracha or hot sauce
¼ tsp. coarse salt
1 Tbsp. + 1 tsp. vegetable oil
1 lb ground beef 80/20
1 lb fresh broccoli florets, cut into 1" pieces
Juice ¼ fresh lime
1 cup loosely packed torn fresh basil leaves
Fresh lime wedges for serving
STIR together in a medium saucepan, rice, Coconut Thai Spice Blend, coconut milk, hot sauce, salt, and ¾ cup water. Stir to combine. Bring to a boil, stirring occasionally. Reduce to a low simmer: cover and cook 19-21 mins., until liquid is absorbed and rice is tender.
MEANWHILE, heat 1 tsp. oil in a large non-stick skillet or wok on high until just smoking. Add beef and brown 3-5 mins., stirring often. Transfer to a bowl and set aside.
HEAT 1 Tbsp. oil in now empty skillet until just smoking. Add broccoli and cook 1 min. Add sauce mixture and Vik's Garlic Fix to pan. Stir and cook 1 min.
ADD beef and any juices back to pan, stir and cook 3 mins. until cooked through.
STIR in lime juice and basil and serve over rice with a lime wedge.
