Also known as “Buddha fruit,” monk fruit is a small, round fruit grown in Southeast Asia. The sweetener is created by removing the seeds and skin of the fruit and crushing it to extract the juice, which is then dried into a concentrated powder. It is high in unique antioxidants called mogrosides, which make it 100–250 times sweeter than regular sugar. To reduce the intensity of sweetness, naturally abundant erythritol is added to allow consumers to use monk fruit sweetener in the same manner as sugar. Erythritol /ear-RITH-ri-tal/ is a type of carbohydrate called a sugar alcohol used as a sugar substitute. Monk fruit extract has zero calories, zero carbs, and is rated zero on the glycemic index. Since it will not spike blood sugar, diabetics can incorporate it into their diet more easily than sugar.
