This coconut and spice-infused rice contains complex, yet subtle flavors inspired by Thai cuisine. It makes a great base for rice cakes, curries, shrimp, scallops, or fish.

Preparation Instructions: Bring 2 cups water and 1 cup Coconut Green Curry Rice to a boil. Reduce heat, cover and simmer until water is almost gone (about 10 mins). 1 cup dry yields 2 cups cooked.
