Root Beer Chai Float
Nostalgic and refreshing, a root beer float is the quintessential summer treat. In this version, an easy homemade root beer takes the place of traditional syrups or sodas that are overly sweet and loaded with additives. Featuring Root Beer Chai herbal tea and three simple ingredients: sugar, seltzer, and vanilla ice cream – you can't get more 'from scratch' than this – unless you make the ice cream yourself!
3 Tbsp Root Beer Chai Herbal Tea
8 oz water at 200ºF
8 oz sugar (1 cup)
4 oz chilled seltzer or club soda
2 to 3 scoops vanilla ice cream
Prepare Root Beer Chai Syrup. Steep Root Beer Chai herbal tea in 8 ounces water (200ºF) for 5 to 6 minutes. Strain infusion into a small
saucepan and add sugar; discard tea leaves. Simmer over medium-low heat and stir gently until sugar has fully dissolved. Remove from heat and let cool before assembling drink.
Add 4 ounces chilled seltzer or club soda to a frosted tall glass.
Stir in 1 to 2 ounces root beer chai syrup (depending on desired level of sweetness).
Add vanilla ice cream.
Top with additional seltzer or club soda, as room allows.
