Matcha Sandwich Cookies

For best storage, keep these frozen in an airtight container. Simply thaw at room temperature for 5 to 10 minutes before serving or eat straight away like a miniature ice cream sandwich!
1 pkg cream cheese (8 oz), softened
4 Tbsp butter, softened
2 cups powdered sugar
½ tsp Madagascar Pure Vanilla Extract
1 Tbsp Matcha
1 sleeve chocolate wafer cookies (9 oz)
Beat together butter and cream cheese until blended. Sift in powdered sugar and matcha; continue beating until smooth and creamy. Transfer to a pastry bag fitted with a plain tip. (A zip-top bag can work in a pinch; cut tip from one corner and use like a piping bag.)
Pipe filling on the flat side of wafer in an even layer about 2-inches across and ¾-inch thick. Top with another wafer, flat side down. Gently press the center of the wafer to distribute to the edge.
Makes approximately 20 cookies.
