Marinades are a simple way to add big flavor to meat, fish, or veggies. While there are endless combinations possible, every marinade should include these three basic components: fat, acid, and seasoning. Fats like olive or vegetable oil help transfer fat-soluble flavors into the marinating food and help prevent moisture loss during cooking. Acids like vinegar, citrus juices, and buttermilk work to tenderize as well as balance flavors, while seasonings including spice blends, aromatic herbs, and salt are vital in imparting specific flavors and identity to each marinade.
For each variety, combine ingredients thoroughly before incorporating meat, fish, or vegetable. For best results, pulse ingredients using a traditional bucket-style blender or immersion blender to emulsify mixture and express the full flavor and aroma of the ingredients. Refrigerate food while marinating; discard marinade after use.
