Summary

    Sweet Chili Lime Sauce

    4 oz rice vinegar
    3 oz Mango Sugar
    2 oz honey
    2 tsp Kimchi Seasoning
    1 tsp cornstarch
    ½ tsp Chile Lime Sea Salt
    2 tsp fresh lime zest

    Whipped Mango Jerk Sauce

    ¹⁄³ cup mayonnaise
    1 cup ripe mango, roughly chopped
    2 Tbsp fresh lime juice
    1 Tbsp Jamaican Jerk Spice Blend
    1 Tbsp Mango Sugar
    ½ tsp Chile Lime Sea Salt
    1 Tbsp chopped fresh cilantro

    Sweet Chili Lime Sauce

    In a small saucepot, combine rice vinegar, sugar, honey, and seasoning. Over medium-low heat, bring mixture to a gentle simmer and cook, while stirring occasionally, just until the sugar has dissolved, about 5 minutes. 

    Prepare a slurry by combing cornstarch with 2 teaspoons water and stir together until smooth. Increase heat to medium and pour slurry into sauce; whisk to incorporate and simmer for one additional minute. Turn off heat and stir in sea salt. 

    Transfer mixture to a serving bowl or mason jar and refrigerate, uncovered, for a minimum of 30 minutes to cool and thicken slightly. For freshest flavor, stir in lime zest just before serving.

     

    Whipped Mango Jerk Sauce

    Combine all ingredients except cilantro and purée until smooth using a food processor, immersion blender, or blender. Stir in chopped cilantro. For best results, prepare at least 1 to 2 hours ahead of serving to allow flavors to develop.
