Backwoods Hickory Pulled Pork
An oh-so-easy way to make tender and delicious pulled pork with minimal prep time! Smoky, juicy pulled pork is a great crowd pleaser and can be served in a variety of ways making leftovers more interesting.
1 oz. Backwoods Hickory Rub
Non-stick cooking spray
1 medium onion, finely diced
WRAP tightly in plastic wrap and refrigerate overnight.
SPRAY the inside of a 6-qt slow cooker with non-stick cooking spray.
PUT the onions in the bottom of the slow cooker and place the seasoned pork on top of the onions.
COVER and cook on low for 8-10 hrs. Verify that the pork has reached a minimum internal temperature of 145°F.
REMOVE pork from slow cooker, reserving liquid and onions.
PULL pork apart using two forks.
ADD onions and reserved liquid if desired. Toss to combine.
SERVE as-is, in a sandwich, in burritos, or on nachos.
