2 Tbsp. Greek Seasoning
2 Tbsp. Organic Extra Virgin Olive Oil
Himalayan Fine Mineral Salt , to taste
2 Tbsp. red wine vinegar
2 cups grilled chicken breast strips, diced (optional)
1 cup cherry tomatoes, halved
1 cucumber, seeded and chopped
1 small red onion, finely chopped
½ cup Kalamata olives, pitted and sliced
1 cup crumbled feta cheese
MEANWHILE, combine lemon juice, red wine vinegar, Organic Extra Virgin Olive Oil, Greek Seasoning, and Himalayan Fine Mineral Salt, stirring well.
POUR dressing over orzo and toss to coat.
ADD chicken, tomatoes, cucumber, onion, black olives, and feta cheese and toss gently to combine.
