Cacio e Pepe Linguine

12 oz. Roasted Garlic Linguine
4 Tbsp. Cacio e Pepe Spice Blend
1 Tbsp. Roasted Black Garlic Sea Salt
From the Grocer
6 cups boiling water
1 Tbsp. salt
1 cup starchy pasta water
1/3 cup extra virgin olive oil
Freshly grated parmesan cheese, garnish
BRING a large pot of water to a boil and add salt. Cook Roasted Garlic Linguine per package instructions.
WHEN water reaches a boil, stir the pasta every minute or so, making sure the ends of the noodles stay submerged and are not sticking together.
AFTER about 5 minutes of the pasta cooking ladle 1 cup of the pasta water into a measuring cup then slowly stir in Cacio e Pepe mixing until smooth.
AFTER the pasta has been cooking for 10 minutes, or is al dente, drain pasta.
IN a large bowl combine pasta with sauce and olive oil and stir vigorously for 2 minutes. The pasta will continue to release starch and the sauce will emulsify. If sauce is clumping, add a bit more pasta water and continue to stir.
SERVE pasta in pasta bowls and top with Roasted Black Garlic Sea Salt and freshly grated parmesan cheese. Serve immediately.
