    RUB pork with Paprika - Smoked Sweet and then with Backwoods Hickory Rub making sure to coat all surfaces thoroughly.
    WRAP tightly in plastic wrap and refrigerate overnight.
    SPRAY the inside of a 6-qt slow cooker with non-stick cooking spray.
    PUT the onions in the bottom of the slow cooker and place the seasoned pork on top of the onions.
    COVER and cook on low for 8-10 hrs. Verify that the pork has reached a minimum internal temperature of 145°F.
    REMOVE pork from slow cooker, reserving liquid and onions.
    PULL pork apart using two forks.
    ADD onions and reserved liquid if desired. Toss to combine.
    SERVE as-is, in a sandwich, in burritos, or on nachos.
