From the Grocer1 lb carrots, peeled and cut into chunks1 TBS grated fresh ginger2 TBS orange marmalade2 TBS lemon juice
MICROWAVE the carrots, covered, until soft, about 5 mins.COMBINE carrots, ginger, marmalade, and lemon juice in a blender and process until smooth. Blend in Organic Extra Virgin Olive Oil until silky.POUR into a container and stir in Vik’s Garlic Fix and Adobo Spice Blend. Allow flavors to meld about 15 mins.SERVE at room temperature or chilled. For a more intense spiced flavor, cover and refrigerate overnight.
