Ras el Hanout Spice Blend

Arabic for ʺhead of the shop.ʺ There are many versions of this type of blend. Dry-fry a few minutes to release the full flavor; then grind fine before coating meat and roasting.

Yellow mustard, black peppercorn, coriander, cardamom, cinnamon, cumin, allspice, crushed red pepper flake, cloves, hibiscus, lavender, star anise.
