    1/4 cup Organic Extra Virgin Olive Oil
    1 tsp Vik's Garlic Fix! Spice Blend
    Salt and pepper to taste
    2 TBS Peppermint Leaf
    2 TBS Parsley

    1 cup quinoa blend
    1/4 cup fresh lemon juice
    4 green onions, diced
    2 medium tomatoes, diced
    1/2 medium yellow bell pepper, diced
    1/2 English cucumber, diced
    Fresh Parsley, for garnish

    PREPARE quinoa according to package directions. Remove from heat and fluff with fork. Transfer to medium bowl. ADD lemon juice, organic extra virgin olive oil, Vik's Garlic Fix! Spice Blend, salt and pepper, peppermint leaf, and parsley to quinoa. Mix thoroughly. COVER tightly and refrigerate until cool - or overnight.30 MINUTES before serving, stir in vegetables and mix well.
