Grown throughout Europe and North America, lavender is known for its beautiful color and perfume-like aroma and flavor. An integral part of the cuisine of southern France, lavender can be rubbed directly on meats, added to vegetables and casseroles, and used to flavor jellies and baked goods. It is also recognized for its use in Herbs de Provence.

Spice Fun Fact: During Roman times, a pound of lavender flowers would sell for 100 denariithe equivalent of one month's wages for a farm laborer.
