WHISK together Butcher’s Rub Spice Blend, Ultimate Umami Seasoning, Vik’s Garlic Fix Spice Blend, oil, soy sauce, sugar, and chives in a small bowl.
RESERVE ¼ cup of liquid, and pour the rest of the marinade into a large zipper top plastic bag, along with the steaks or chops. Seal bag and place in refrigerator 30 mins to 1 hr.
WHISK vinegar into reserved ¼ cup liquid, set aside.
PREHEAT grill or broiler.
GRILL or broil steaks or chops as desired.
TRANSFER grilled steaks or chops to a shallow pan.
POUR reserved liquid over top. Cover loosely with aluminum foil, and let rest 10 min, turning steaks over halfway through. Slice and serve.
