PREHEAT oven to 350°F. Line 12 muffin tins with foil liners.
PLACE one full vanilla wafer in the bottom of each liner.
IN a large mixing bowl, beat together cream cheese, Sweet Matcha, and Madagascar Pure Vanilla Extract. In order to avoid a matcha mess, beat on the lowest speed for 1 min. Then, continue to beat on medium-speed until light and fluffy. Add eggs one at a time and beat until combined.
FILL each liner ¾ full with the cream cheese mixture.
BAKE for 20-30 mins or until set.
SERVE topped with your favorite Sugar, a dollop of whipped cream, and a sprinkling of matcha.
