PLACE all the ingredients in the bowl of a food processor and process until thick and smooth; scrape down sides as needed.
REFRIGERATE until ready to use. The flavors will develop over about an hour, if you’ve got the time.
*Don’t have enough cream cheese? Add in some goat cheese, sour cream with a little mayonnaise, or Greek-style yogurt. You can eyeball the measurements and just taste as you go.
*For an added kick of corn flavor and a thicker dip, add another ½ cup of corn to the mix.
