    Tin foil

    1 ½ Tbsp Olive Oil

    3 medium potatoes, thinly sliced

    1 medium sweet onion, sliced

    ¾ cup of shredded cheese, sharp cheddar or Colby-jack

    Salt and pepper to taste

    PREHEAT your grill over med-high heat.

    PLACE a large piece of tin foil (about the size of a baking sheet) on a flat surface. Drizzle olive oil in the center of the tin foil.

    COMBINE all other ingredients on the middle of the tin foil and mix thoroughly.

    PLACE a second piece of tin foil (same size) on top of the potatoes and pinch the upper and lower foil pieces together with your fingers.

    TEAR a small hole in the very top of the foil to use as a steam vent.

    GRILL the foil packet for 20 minutes, or until the potatoes are tender and cheesy. Enjoy!
