Ingredients
- 1 (¼ oz) pkg unflavored gelatin

- ½ tsp kosher salt
- 1 (14 oz) can sweetened condensed milk
- 2 large eggs, beaten
- 1 (15 oz) can pumpkin purée

tsp Pure Vanilla Extract
- 1 (9-inch) prepared pie crust (classic* or graham cracker)
- *classic pie crust should be prebaked
Garnish
- 1 cup cold heavy whipping cream
- 2 Tbsp powdered sugar
- 1 tsp Pure Vanilla Extract
- 1 tsp Cinnamon – Vietnamese Ground

Directions
- Prepare Pie. To a heavy-bottomed saucepan, add the gelatin, spices, salt, sweetened condensed milk, and beaten eggs; mix well until fully combined. Let mixture stand for one minute, then place on burner over low heat, stirring constantly until the gelatin dissolves and mixture thickens, about 10 minutes. Remove from heat.
- Stir in pumpkin purée and Pure Vanilla Extract until thoroughly combined; pour mixture into the prepared pie crust. Chill for at least 3 hours before serving.
- Prepare Whipped Cream. In a very cold bowl, whip the cream, powdered sugar, and Pure Vanilla Extract using an electric mixer on medium-high speed until medium peaks form. Garnish pie and top with a final dusting of cinnamon just before serving.
