Directions
- Prepare Streusel. In a medium bowl, combine flour, dark brown sugar, cinnamon, and oats. Add cubed butter; using your fingers, incorporate the butter into the flour until a crumble forms. Store in the freezer until ready to use.
Prepare Cake. Preheat oven to 350°F. Grease and line a 9-inch square pan; set aside. Add the tea to the boiled milk; steep for 4 minutes. Strain to remove tea solids; set aside liquid until ready to use. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt; set aside.
- Using an electric mixer fitted with a paddle attachment, beat together the butter and light brown sugar until light and fluffy. Add sour cream and vanilla extract, beat until smooth. Beat in the eggs, one at a time, until combined. Add flour mixture and beat at a low speed until just combined. Add the tea-infused milk and mix gently - do not overmix.
- Spoon half the batter into the prepared pan. Sprinkle about 1/3 of the streusel mixture evenly on the top. Carefully spread the remaining batter on top. Top evenly with remaining streusel. Sprinkle the Swedish Pearl Sugar on top.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool for 30 minutes, then turn it out onto a plate and transfer it right side up onto a serving plate.
- Prepare Glaze. Whisk together powdered sugar, milk, vanilla extract, and Cinnamon Vanilla Sugar until smooth. Drizzle the glaze over the cake and let it set.
