Bananas Foster Bread Pudding

Ingredients

  • 1 Tbsp Bananas Foster Black Tea

  • 1 cup hot water at 200ºF

  • 3 ea ripe medium bananas

  • 4 Tbsp unsalted butter, melted

  • 2 ea eggs

  • 1 cup whole milk or milk of choice

  • 3 Tbsp Cinnamon Vanilla Monk Fruit Sweetener

  • 2 tsp Cinnamon Ground - Vietnamese

  • 6 cups brioche or bread of choice, cut into 1-inch cubes

  • 2 Tbsp avocado oil

  • 4-6 scoops vanilla ice cream, optional

  • 1 ea medium banana, sliced, optional

  • 4 Tbsp caramel sauce, optional

Directions

  1. Preheat oven to 350ºF.

  2. Prepare Bread Pudding. Add Bananas Foster Black Tea and hot water to a mug. Steep for 4 minutes, then strain completely. In a medium bowl, mash bananas with a fork. Add brewed tea, melted butter, eggs, milk, Cinnamon Vanilla Monk Fruit Sweetener, and Vietnamese Ground Cinnamon; stir until combined. Fold in the cubed bread. Let the bread soak in the mixture for 10 minutes.

  3. Grease bottom and sides of a 9x13-inch baking dish with avocado oil. Pour mixture into the baking dish. Bake for 40–50 minutes, or until the edges are golden brown and the center is set. Remove from oven and let cool for 10 minutes.

  4. Top with vanilla ice cream, sliced banana, and/or caramel sauce.
