Quinoa Tabouleh

A refreshing, gluten-free salad or side dish for the whole family! Enjoy fresh veggies, light seasonings, and hearty quinoa.
Ingredients
- 1 cup quinoa blend
- 1/4 cup fresh lemon juice

1/4 cup Extra Virgin Olive Oil

1 tsp Vik's Garlic Fix! Spice Blend
- Salt and pepper to taste

2 TBS Peppermint Leaf

2 TBS Parsley
- 4 green onions, diced
- 2 medium tomatoes, diced
- 1/2 medium yellow bell pepper, diced
- 1/2 English cucumber, diced
- Fresh Parsley, for garnish
Directions
- PREPARE quinoa according to package directions. Remove from heat and fluff with fork. Transfer to medium bowl.
- ADD lemon juice, extra virgin olive oil, Vik's Garlic Fix! Spice Blend, salt and pepper, peppermint leaf, and parsley to quinoa. Mix thoroughly.
- COVER tightly and refrigerate until cool - or overnight.
- 30 MINUTES before serving, stir in vegetables and mix well.
