Matcha Beet Root Energy Bites

These nutrient-rich, no-bake bites are a delicious, on-the-go source of clean energy any time of day.
Ingredients

3 Tbsp +/- Matcha, divided

2 Tbsp Organic Beet Root Powder, divided
- ½ cup rolled oats
- ¼ cup raw honey or agave
- ¼ cup almond flour or vanilla protein powder
- ¼ cup nut butter of choice (almond, cashew, peanut)
- 2 Tbsp water
- 2 Tbsp unsweetened desiccated coconut, optional
Directions
- In two small, shallow dishes portion 1 Tablespoon matcha in one and 1 Tablespoon beet root powder in the other. Set aside.
- In a medium mixing bowl add all remaining ingredients. Mix until fully combined. Using your hands, roll into bite-sized balls (¾ to 1-inch).
- Gently roll each in matcha and beet root powder to create a colorful garnish.
Recipe Note
Notes:
2 Tablespoons Matcha in the dough, equates to roughly ¾ teaspoon matcha in each bite, (marginally more after the colorful garnish is applied).Adjust quantity as desired. For context, the standard dose for preparing an individual serving of matcha is 1 teaspoon.
Bites can be individually wrapped and frozen for convenient grab-and-go snacking. They thaw in minutes!
Optional additional mix-ins: mini chocolate chips, dried cranberries, chopped nuts.
