Ingredients
Dipping Sauce

¼ tsp Thyme

1 to 2 Tbsp milk, as needed

1½ to 2 lbs Yukon gold potatoes, unpeeled

3 Tbsp cornstarch

¾ cup water

3 tsp The Original French Fry Seasoning, divided

¾ tsp Thyme

Directions
- Prepare Dipping Sauce. In a small bowl, mix dipping sauce ingredients. Adjust consistency with milk, as needed. Set aside to allow flavors to develop.
- Prepare Fries. Adjust oven rack to lowest position; preheat to 425ºF. Generously spray rimmed baking sheet with cooking spray. Add 3 tablespoons vegetable oil to the baking sheet and tilt until the surface is evenly coated with oil; set aside.
Halve potatoes lengthwise; turn halves cut-side down on the cutting board. Slice potatoes lengthwise into 1/3- to ½- inch-thick wedges or planks; set aside.
In a large, microwave-safe bowl, stir cornstarch and water, ensuring no lumps remain. Microwave, stirring every 30 seconds, until mixture begins to thicken, 1 to 3 minutes. Remove from microwave; add 2 teaspoons French Fry Seasoning and Thyme and continue to stir until mixture thickens to a pudding-like consistency. (If needed, add up to 2 tablespoons water to maintain correct consistency.)
Transfer potato wedges to seasoned cornstarch mixture and toss until each piece is evenly coated. Arrange coated wedges on the prepared baking sheet. Cover with aluminum foil; bake for 10 minutes. Remove and discard foil; continue baking until bottoms are crisp and golden, 12 to 18 minutes. Remove from oven; using a thin metal spatula, flip each fry. Bake until second side is crisp and golden, 12 to 15 minutes longer. Remove from oven; immediately season with remaining teaspoon of French Fry seasoning. Serve with dipping sauce and ketchup, if desired.
