Ingredients
- 2 lbs sweet potatoes, peeled and cut into 1½” pieces (4 to 5 large)
- 1 tsp kosher salt
- 2 large eggs
- 4 Tbsp unsalted butter, softened
- ½ cup half & half

- ½ tsp kosher salt
- ½ cup all-purpose flour
- ½ cup packed brown sugar
- 4 Tbsp unsalted butter, softened

¾ tsp Maple Bourbon Jalapeño Seasoning
- ¼ tsp kosher salt
- ¾ cup chopped pecans
- special equipment: cooking spray, casserole dish, hand mixer or potato masher

Spicy Pecan Streusel
Directions
- Preheat oven to 350ºF. Coat casserole dish with cooking spray; set aside.
- Prepare Sweet Potatoes. To a 4-quart pot add sweet potato pieces and kosher salt. Add enough water to cover the potatoes. Cook over medium-high heat until very tender, 10 to 15 minutes. Drain and transfer to a large mixing bowl.
- Add remaining ingredients; using a hand mixer on low speed or potato masher, mix until combined, retaining some small potato pieces for texture. Transfer to prepared casserole dish.
- Prepare Streusel. To a small mixing bowl add streusel ingredients except for pecans. Using a fork, cut in butter until the mixture is coarse and looks like peas; stir in pecans. Sprinkle evenly over sweet potato mixture.
- Bake, uncovered for 25 to 30 minutes until streusel topping is golden.
