Crispy Veggie Latkes

Crispy, golden, and packed with veggies, these gluten-free latkes bring big flavor to the table along with a quick garlic aioli dipping sauce.
Ingredients
Garlic Aioli

1/2 cup avocado oil-based mayonnaise

1/2 cup plain Greek yogurt

1 tsp Garlic Aioli Spice Blend
Latkes
-
1 cup shredded raw parsnip
-
1 cup shredded raw carrot
-
1 cup shredded raw zucchini
-
1/2 cup almond flour
-
2 large eggs
-
1 Tbsp avocado oil
-
2 tsp French Onion Seasoning
Garnish

2 tsp Chives
-
2 tsp Bacon Smoked Sea Salt

Directions
Prepare Aioli. In a small bowl, mix aioli ingredients; set aside. Can be made ahead of time and refrigerated to allow flavors to meld.
Prepare Latkes. In a large bowl, mix shredded parsnips, carrots, zucchini, almond flour, eggs, oil, and French Onion Seasoning until well combined. Scoop 1/4 cup of batter and using your hands, form into a patty. Place in an air fryer basket lined with parchment paper.
Cook Latkes. Set air fryer to 350°F; cook the latkes for 6 to 8 minutes. Carefully flip the latkes and cook for another 6 to 8 minutes, until the edges are crispy. Transfer cooked latkes to a plate.
Top with Chives and Bacon Smoked Sea Salt. Serve with Garlic Aioli.
