Sunday Bolognese

A serving of Bolognese is like a warm hug from a loved one. Simmering low and slow for hours, this version will keep you coming back for more.
Ingredients
- 2 Tbsp olive oil
- 1 medium yellow or white onion, minced
- 2 medium carrots, minced
- 4 ribs celery, minced
- ½ cup red wine
- 1 lb ground meat (i.e., beef, pork, & veal mix)
- 3 Tbsp tomato paste

1 Tbsp Kickin’ Garlic Spice Blend

1 Tbsp Italian Herb Spice Blend

1 Tbsp Tuscany Spice Blend

1 Tbsp Rosemary
- 2 tsp ground fennel seeds

2 tsp Paprika – Smoked Hot
- 1 Tbsp kosher salt
- 1 Tbsp cracked black pepper
- 2 (28 oz) cans crushed tomatoes
- 1 head roasted garlic
- 2-inch parmesan rind
Directions
In a large pot, sauté onion, carrot, and celery over medium-high heat in olive oil until tender, about 10 minutes. Deglaze with red wine and cook for one minute, stirring regularly. Add ground meat, tomato paste, and all the dried spices and herbs. Stir occasionally until meat is cooked through. Add crushed tomatoes, whole roasted garlic cloves, and parmesan rind. Simmer for two to three hours on low heat. Season to taste and serve with pasta of choice.
