Honey Citrus Salmon Bites

Ingredients

1 lb skinless salmon fillets, cut into 1-inch cubes

2 tsp Northwest Salmon Rub

2 tsp Honey Mustard Seasoning, divided

½ tsp Lemon Fire Sea Salt

2 tsp olive or avocado oil

1 Tbsp unsalted butter, melted

1 Tbsp fresh-squeezed orange juice

1 Tbsp honey

Directions
Preheat air fryer to 400ºF for 5 minutes. Insert parchment paper or spray the fryer basket with nonstick spray.
Using a mortar and pestle or spice grinder, finely grind the Northwest Salmon Rub. Combine 1 teaspoon Honey Mustard Seasoning and Lemon Fire Salt; set aside.
Prepare Salmon. Pat salmon dry using paper towels. Drizzle the salmon with olive oil. Sprinkle the spices over the salmon cubes and gently toss until fully coated.
Arrange the salmon cubes in a single layer in the preheated basket; ensure they are not touching. Cook in batches as necessary; do not overcrowd. Cook for 7 minutes, turning them over halfway through cooking. They should be lightly golden, tender, and flaky.
Prepare Sauce. Combine the melted butter, orange juice, honey, and remaining teaspoon of Honey Mustard Seasoning. Pour over the cooked salmon cubes and toss gently to coat. Serve over rice, pasta, or as a salad topper.
