Homestyle Meatloaf with Spicy Bloody Mary Ketchup

Ingredients

    • 1 Tbsp Bloody Mary Spice Blend
    • 2 tsp Tomato Powder
    • 1 tsp kosher salt
    • 6 oz tomato paste
    • 4 oz white vinegar
    • 2 Tbsp honey
    • 2 oz water

    • 3 lbs ground meat (i.e., ground beef, pork, & veal blend)
    • 2 Tbsp Butcher’s Rub Spice Blend
    • 1 Tbsp Onion Powder
    • 2 tsp Garlic Powder
    • 1 Tbsp Parsley
    • 1 Tbsp kosher salt
    • 4 Tbsp milk
    • 2 eggs
    • 1 cup breadcrumbs
    • 2 Tbsp ketchup

    Directions

    1. Preheat oven to 350°F.
    2. Prepare Ketchup. Add all ingredients to a medium saucepan and whisk. Simmer on medium-low heat for 15 to 20 minutes. Remove from heat to cool while meatloaf bakes.
    3. Prepare Meatloaf. In a large mixing bowl, gently fold together all meatloaf ingredients except for ketchup. Place on a greased baking pan and form to desired shape.
    4. Brush meatloaf with ketchup and bake for 50 to 55 minutes. Remove from heat, brush with remaining ketchup, and bake for 15 additional minutes or until center reaches 165°F.
