Green Goddess Sandwich

This crunchy and vibrant sandwich is a delicious vegetarian lunch idea. The herby mayo spread with Green Goddess Seasoning, ground Green Peppercorn, and Dill Pickle Sea Salt is a must and brings the whole sandwich together.
Ingredients
Green Goddess Mayo

1 tsp Green Peppercorn, freshly ground

½ cup mayonnaise

½ cup lemon juice

¼ cup basil leaves, torn

2 Tbsp Green Goddess Seasoning

¼ tsp Dill Pickle Sea Salt, approx. 15 grinder turns
Sandwich Assembly
-
2 slices sourdough or whole wheat bread, lightly toasted

½ ea avocado, thinly sliced

6 ea thin cucumber slices
-
2 ea lettuce leaves

Special Equipment: mortar and pestle, small blender or immersion blender

Directions
Prepare Green Goddess Mayo. Using a mortar and pestle, grind Green Peppercorn. Add ground Green Peppercorn, mayonnaise, lemon juice, basil, Green Goddess Seasoning, and ground Dill Pickle Sea Salt to a small blender. Blend until smooth. Alternatively, add these ingredients to a medium container and blend with an immersion blender. Yields approximately one half cup.
Sandwich Assembly. Spread green goddess mayo on one side of each slice of toasted bread. Store any leftover mayo in the refrigerator for later use. Layer avocado slices, cucumber slices, and lettuce on one of the bread slices. Close sandwich with the other bread slice.
