Creamy Lemon Seafood Linguine

Delight in linguine topped with shrimp and clams, infused with Zesty Lemon Garlic Pesto and Coastal Blend Seasonings for a bright, savory dish.
Ingredients
- 16 oz linguine pasta
- 1 lb 16-20 count shrimp, peeled and cleaned

½ tsp Lemon-Garlic Pepper Seasoning

1½ tsp Zesty Lemon Garlic Pesto Seasoning, divided
- 2 Tbsp olive oil, divided
- 2 ea shallots, diced
- 4 cloves garlic, thinly sliced

1 tsp Coastal Blend Seasoning
- 1 cup dry white wine
- 1 lb little neck clams, scrubbed and soaked
- 1 cup heavy cream
- ½ cup freshly grated parmesan, plus extra for serving
- Juice of ½ lemon
- 1 tsp lemon zest
- ¼ cup fresh basil, chiffonade
Directions
- Cook pasta according to directions for al dente in salted water. Drain, reserving 1 cup of cooking water.
- To a medium bowl add shrimp; season with Lemon-Garlic Pepper Seasoning and ½ teaspoon Zesty Lemon Garlic Pesto Seasoning; toss to coat.
- Heat 1 Tablespoon of olive oil in a large skillet over medium heat. Add the shrimp to the skillet in a single layer. Let the first side cook for 2 to 3 minutes, and then flip. Allow the second side to cook for another 1 to 2 minutes until the shrimp is pink and just opaque. Remove from pan.
- To the pan, add remaining olive oil, shallot and garlic; cook until the shallots are translucent, about 2 to 3 minutes. Add remaining 1 teaspoon of Zesty Lemon Garlic Pesto Seasoning and Coastal Blend Seasoning. Add wine and deglaze, scraping up any brown bits on the bottom of the pan. Bring to a simmer.
- Add clams and cover with a lid. Cook until they open, about 5 to 8 minutes. Remove them from the pan as they open; discard any clams that remain closed.
- Stir in the heavy cream; return to a simmer then stir in the parmesan cheese. Once melted, stir in lemon juice and zest.
- Add the drained pasta into the sauce and toss to combine. If the consistency is a bit dry, add some reserved pasta water. Taste and adjust seasoning as needed. Add the shrimp, clams, and basil to the pasta, along with any drippings. Toss gently to combine.
