Creamy Lemon Seafood Linguine

Ingredients

  • 1 lb linguine pasta

  • 1 lb 16-20 count shrimp, peeled and cleaned

  • ½ tsp Lemon-Garlic Pepper Seasoning
  • 1½ tsp Zesty Lemon Garlic Pesto Seasoning, divided

  • 2 Tbsp olive oil, divided

  • 2 ea shallots, diced

  • 4 cloves garlic, thinly sliced

  • 1 tsp Coastal Blend Seasoning
  • 1 cup dry white wine
  • 1 lb little neck clams, scrubbed and soaked

  • 1 cup heavy cream
  • ½ cup freshly grated parmesan, plus extra for serving
  • Juice of ½ lemon
  • 1 tsp lemon zest
  • ¼ cup fresh basil, chiffonade

Directions

  1. Cook pasta according to directions for al dente in salted water. Drain, reserving 1 cup of cooking water.
  2. To a medium bowl add shrimp; season with Lemon Pepper Seasoning and ½ teaspoon Zesty Lemon Garlic Pesto Seasoning; toss to coat.
  3. Heat 1 Tablespoon of olive oil in a large skillet over medium heat. Add the shrimp to the skillet in a single layer. Let the first side cook for 2 to 3 minutes, and then flip. Allow the second side to cook for another 1 to 2 minutes until the shrimp is pink and just opaque. Remove from pan.
  4. To the pan, add remaining olive oil, shallot and garlic; cook until the shallots are translucent, about 2 to 3 minutes. Add remaining 1 teaspoon of Zesty Lemon Garlic Pesto Seasoning and Coastal Blend Seasoning. Add wine and deglaze, scraping up any brown bits on the bottom of the pan. Bring to a simmer.
  5. Add clams and cover with a lid. Cook until they open, about 5 to 8 minutes. Remove them from the pan as they open; discard any clams that remain closed.
  6. Stir in the heavy cream; return to a simmer then stir in the parmesan cheese. Once melted, stir in lemon juice and zest.
  7. Add the drained pasta into the sauce and toss to combine. If the consistency is a bit dry, add some reserved pasta water. Taste and adjust seasoning as needed. Add the shrimp, clams, and basil to the pasta, along with any drippings. Toss gently to combine.
