Apple Baked Pork Chops

Ingredients
Pork Chops
- 4 (8oz) bone-in pork chops (about 1- to 1 ½-inch thick)

- 1 medium yellow onion, diced small
- 1 large apple*, unpeeled, cored, diced medium (½ inch)

- ¼ cup roasted pecan halves, chopped (optional)
Sauce
- 3 Tbsp olive oil

- 2 Tbsp soy sauce
- 2 Tbsp Worcestershire sauce

- 1 Tbsp whole grain mustard
- 1 Tbsp Autumn Harvest Spice Blend
- 1 Tbsp apple cider vinegar
- *Fuji, Gala, Golden Delicious, Honeycrisp, or Pink Lady

Directions
Approximately 30 minutes before baking, remove the pork chops from the refrigerator to rest at room temperature. Pat dry with paper towels; season both sides with 2 to 2½ teaspoons Applewood Smoked Sea Salt.
Preheat oven to 375ºF. In a small bowl, whisk together sauce ingredients; set aside.
- To a medium mixing bowl, add onion, apple, Autumn Harvest Spice Blend, and remaining ½ teaspoon Applewood Smoked Sea Salt; mix to combine. Add half of the mixture in an even layer to a 9x13-inch baking dish. Arrange the seasoned pork chops on top of the apple-onion mixture. Pour half of the sauce over the pork chops. Cover with aluminum foil and bake for 15 minutes.
Meanwhile, add the chopped pecans and remaining sauce to the remaining onion-apple mixture; stir to combine. After 15 minutes of cooking, remove pork from oven; turn chops over and cover the pork with the onion-apple-sauce mixture. Return to oven, uncovered, for another 10 to 15 minutes or until the internal temperature registers 145ºF on a digital thermometer (cooking time will vary depending on thickness). Rest for at least 3 to 5 minutes before serving.
