Adobo Pork Bake

Meal planning doesn't have to be a chore! This easy, nutritious sheet pan recipe is perfect for a busy week. Adobo Spice Blend adds a salty, citrus twist, while California Spice Blend adds herbal touches. Mix up the ingredients to make the most of your adobo bake.
                      
                      Ingredients

2½ Tbsp. Extra Virgin Olive Oil
        
            
              
                
 - 
            
1½ Tbsp. Adobo Spice Blend
        
            
              
                
 - 
            
2 tsp. Dark Chili Powder
        
            
              
                
 - 
            
1 Tbsp. California Spice Blend
        
            
              
                
 - 2 sweet potatoes, peeled and cubed 1" pieces
 - 1 lb center cut pork chops, cubed (or protein of choice)
 - 2 zucchini, cut into large quarters
 
Directions
- PREPARE a baking tray with olive oil spray, parchment or non-stick mat.
 - ADD prepared sweet potatoes and pork to the tray, then separately add zucchini to the opposite end (keep separate for seasoning).
 - DRIZZLE all ingredients with Organic Extra Virgin Olive Oil.
 - SPRINKLE Adobo Spice Blend and Dark Chili Powder on potatoes and pork. Toss lightly to coat.
 - SPRINKLE zucchini with California Spice Blend and toss.
 - BAKE at 375°F for 20-25 mins.
 
Recipe Note
Mix things up: Swap potatoes for carrots or beets, or zucchini for squash or onion wedges. Try different proteins! Substitute 1 lb of turkey tenderloin or 1 lb chicken breast if desired.
