Mango Dipping Sauce Duo

These versatile dipping sauces will add a boost of tropical flavor to everything from fried shrimp and grilled pork to spring rolls and chicken wings. One creamy and one tart, they both deliver a unique and delicious combination of mango, lime, and spice. Serve them together or individually!

Ingredients

- 4 oz rice vinegar
- 3 oz Mango Sugar
- 2 oz honey
- 2 tsp Kimchi Seasoning
- 1 tsp cornstarch
- ½ tsp Chile Lime Sea Salt
- 2 tsp fresh lime zest

- 1/3 cup mayonnaise
- 1 cup ripe mango, roughly chopped
- 2 Tbsp fresh lime juice
- 1 Tbsp Jamaican Jerk Spice Blend
- 1 Tbsp Mango Sugar
- ½ tsp Chile Lime Sea Salt
- 1 Tbsp chopped fresh cilantro

- In a small saucepot, combine rice vinegar, sugar, honey, and seasoning. Over medium-low heat, bring mixture to a gentle simmer and cook, while stirring occasionally, just until the sugar has dissolved, about 5 minutes.
- Prepare a slurry by combing cornstarch with 2 teaspoons water and stir together until smooth. Increase heat to medium and pour slurry into sauce; whisk to incorporate and simmer for one additional minute. Turn off heat and stir in sea salt.
- Transfer mixture to a serving bowl or mason jar and refrigerate, uncovered, for a minimum of 30 minutes to cool and thicken slightly. For freshest flavor, stir in lime zest just before serving.

- Combine all ingredients except cilantro and puree until smooth using a food processor, immersion blender, or blender. Stir in chopped cilantro. For best results, prepare at least 1 to 2 hours ahead of serving to allow flavors to develop.
