Ingredients
Fried Chicken
- 1 cup + 3 Tbsp buttermilk, divided

- 1½ lbs chicken tenderloins (or chicken breasts, cut into 4 strips)
- 1½ cups all-purpose flour
- 1 tsp baking powder
- neutral oil for frying, such as canola or vegetable
Waffles
- 1 box favorite waffle mix

- 1 tsp Maple Bourbon Jalapeño Seasoning
- garnish green onion, chopped

Directions
- Prepare Marinade. Add 1 cup buttermilk, 2 tsp Sweet Onion Sugar, 2 tsp Maple Bourbon Jalapeño Seasoning, and 1 tsp kosher salt to a shallow dish. Whisk to combine. Add the chicken to the marinade and toss to fully coat. Cover and refrigerate for 4 to 8 hours. Remove the chicken from the marinade and pat most of the mixture off.
- Prepare Breading. To a shallow dish, add the flour, baking powder, 1 tsp Sweet Onion Sugar, 1 tsp Maple Bourbon Jalapeño Seasoning, and 1 tsp kosher salt. Whisk to combine. Drizzle in the 3 Tbsp buttermilk. Use a fork to swirl it through, allowing it to form clumps in the flour. Add a few tenderloins at a time into the clumpy flour mixture, making sure to press down firmly so the chicken is fully covered. Transfer the tenderloins to a baking sheet or large plate. Continue with the remaining chicken.
- Fry Chicken. Heat ½ to 1 inch of neutral oil in a deep cast iron skillet to 350ºF. Carefully lower 3 to 4 chicken tenderloins into the hot oil - do not crowd. Allow the first side to cook for about 2 minutes until golden. Flip and allow the other side to cook for an additional 2 to 3 minutes until golden brown and registers 165ºF on a meat thermometer. Transfer to a paper towel-lined plate.
- Prepare Waffles & Infuse Syrup. Prep waffle mix according to package directions, add the remaining 1 tsp of Sweet Onion Sugar to the waffle mix dry ingredients. Prepare waffles as directed. The waffles can be kept warm in a 200ºF oven until ready to serve. In a small saucepan over medium-low heat, add the maple syrup and 1 tsp Maple Bourbon Jalapeño Seasoning. Stir occasionally until warmed through. Remove from heat; cover to keep warm until ready to serve.
- Assemble. Place 2 pieces of fried chicken on top of each waffle. Drizzle with infused maple syrup and garnish with green onions.
