Ingredients
Cola Classic Cold Brew

1 oz Cola Classic Black Tea
-
24 oz water
Coconut Simple Syrup

1.5 oz Toasted Coconut Sugar
-
2 oz water at 200ºF
Lemon Cold Foam
-
2 oz heavy whipping cream
-
2 Tbsp Lemon Sugar
Drink Assembly
-
½ cup ice
-
6 oz cola classic cold brew
-
6 oz club soda or seltzer
-
1 Tbsp coconut simple syrup
-
2 Tbsp lemon cold foam
-
garnish lemon slice
-
Special Equipment: disposable tea bags or tea infuser, Shake Strain & Pour Jar or cocktail shaker

Directions
Prepare Cola Classic Cold Brew. Portion Cola Classic Black Tea into tea bags or a tea infuser and place in a large pitcher. Add water; refrigerate for 8 hours to steep. Remove and discard tea solids. Yields approximately 24 ounces.
Prepare Coconut Simple Syrup. In a heat-proof glass, add Toasted Coconut Sugar and hot water; stir until completely dissolved. Set aside to cool. Yields approximately 2½ ounces.
Prepare Lemon Cold Foam. Add heavy whipping cream and Lemon Sugar to the Shake Strain & Pour Jar or cocktail shaker. Secure the lid and shake for 60 seconds, or until the sugar is dissolved, and the heavy whipping cream has aerated and slightly thickened. Yields approximately 4 ounces.
Assemble Drink. In a large drinking glass, add ice, cold brew, club soda, and coconut simple syrup. Stir to combine. Top with lemon cold foam and garnish with a lemon slice. Yield: Drink assembly yields 1 drink. Ingredient prep yields enough to make 4 drinks.
Note: Store leftover cold brew in the refrigerator and enjoy within 3 days.
