Directions
- Prepare Concentrate. Combine herbal tea and water; cover and steep for 10 minutes. Strain; discard tea solids. Allow to cool. Yields 8 to 9 ounces.
- Rim Glass. Portion the simple syrup, honey, or agave in a small dish. Holding a Collins glass (or other tall skinny glass) at a 45-degree angle, dip the side of the rim in the sweetener and rotate the top half-inch of the glass to coat the entire outer rim. Next, portion the sugar in another small dish. Using the same technique, rotate the glass rim in the sugar to coat.
- Drink Assembly. Fill sugar-rimmed glass halfway with ice. Add concentrate and top with soda; stir to combine. Garnish with lemon twist and fresh raspberries.
