Marinated Caprese Skewers

These classic skewers get a flavor boost of seasoned fresh mozzarella. Not only are these vegetarian treats visually appealing, but they also come together in no time, making them an ideal choice for last-minute entertaining. With vibrant flavor and garden-fresh aroma, they make a deliciously sophisticated addition to your appetizer spread. Pairs perfectly with Cucumber Dill Canapés.
Ingredients

1/3 cup Basil
Extra Virgin Olive Oil

2 tsp Tuscany
Spice Blend
- 2 tsp fresh lemon zest

24 pieces fresh ciliegine mozzarella (1/3 oz “cherry size”)
- 1 pint cherry or grape tomatoes, washed
- 0.75 oz pkg fresh basil
- drizzle balsamic glaze, optional

¾ tsp Rosemary
Basil Sea Salt
- special equipment: medium wooden skewers (6-inch)
Directions
- Marinate Cheese. Drain mozzarella if necessary. In a bowl or jar, combine olive oil, spice blend, and lemon zest. Add mozzarella and stir to coat thoroughly. Cover and refrigerate for 2 to 24 hours.
- Assemble. Thread each skewer in the following order: tomato, basil leaf, mozzarella, basil leaf, tomato, basil leaf, mozzarella. Fold larger basil leaves in half as necessary. Arrange skewers on a serving plate. Drizzle with balsamic glaze and additional seasoned olive oil. Finish with a sprinkle of sea salt.
Recipe Note
Note: for smaller skewers (4-inch), thread one of each: cherry tomato, basil leaf, mozzarella.
