2 TBS Organic Extra Virgin Olive Oil
3 tsp Smoked BBQ Rub
2 TBS Honey - Granulated
1½ TBS Tuscany Spice Blend
From the Grocer
6 medium red potatoes, peeled, and cut into ¼” matchsticks
3” long 1 lb tomatoes, peeled, cored, and diced or 1 (16 oz) canned tomato puree
2 TBS white wine vinegar
1 TBS red onion, finely chopped
To prepare fries:
PREHEAT oven to 400°F.
LINE a rimmed baking sheet with aluminum foil and spray with non-stick cooking spray.
COMBINE potatoes with Organic Extra Virgin Olive Oil and Smoked BBQ Rub in a medium bowl and toss to thoroughly coat.
TRANSFER to prepared baking sheet and spread potatoes evenly.
BAKE in oven 25-30 mins. Season with additional Smoked BBQ Rub, if desired.
SERVE on a serving platter with Tuscan Tomato dipping sauce on the side.
To prepare dipping sauce:
PUREE tomatoes, vinegar, onion, Honey - Granulated, and Tuscany Spice Blend in a blender or food processor.
POUR into a saucepan over medium heat and cook 5-7 mins until warmed through.
TRANSFER sauce to a bowl and chill in the refrigerator, 30 mins.
