From The Spice & Tea Exchange®2 TBS Organic Extra Virgin Olive Oil3 tsp Smoked BBQ Rub2 TBS Honey - Granulated1½ TBS Tuscany Spice BlendFrom the Grocer6 medium red potatoes, peeled, and cut into ¼” matchsticks3” long 1 lb tomatoes, peeled, cored, and diced or 1 (16 oz) canned tomato puree2 TBS white wine vinegar1 TBS red onion, finely chopped
To prepare fries:PREHEAT oven to 400°F.LINE a rimmed baking sheet with aluminum foil and spray with non-stick cooking spray.COMBINE potatoes with Organic Extra Virgin Olive Oil and Smoked BBQ Rub in a medium bowl and toss to thoroughly coat.TRANSFER to prepared baking sheet and spread potatoes evenly.BAKE in oven 25-30 mins. Season with additional Smoked BBQ Rub, if desired.SERVE on a serving platter with Tuscan Tomato dipping sauce on the side.
To prepare dipping sauce:PUREE tomatoes, vinegar, onion, Honey - Granulated, and Tuscany Spice Blend in a blender or food processor.POUR into a saucepan over medium heat and cook 5-7 mins until warmed through.TRANSFER sauce to a bowl and chill in the refrigerator, 30 mins.
