Rainbowl
2 Tbsp Aurora Blue herbal tea
½ cup water at 200°F (4 oz)
1 each large banana
1 cup canned unsweetened coconut cream (8 oz)*
½ cup frozen or fresh coconut chunks**
1 to 2 Tbsp Golden Monk Fruit Sweetener
*stir before portioning

Make Ahead. Prepare Aurora Blue ice cubes. Combine herbal tea and hot water; steep for 15 minutes to make a concentrate. Strain fully. Transfer brewed tea to an ice cube tray; fill each mold about halfway. Freeze solid.
Peel and cut banana into ½-inch slices. Arrange in a single layer on a plate or in a zip-top bag. Freeze until firm.
Slice and prepare fruit toppings just before blending.
Make Smoothie. To a blender, add coconut chunks and frozen banana slices; blend on low until small bits remain. Scrape down sides as needed with a rubber spatula. Add coconut cream and 1 tablespoon of sweetener; blend on medium-high speed until almost smooth. Scrape down sides. Taste and adjust sweetness as desired. Add Aurora Blue ice cubes; blend on high speed until very smooth.
Pour or scoop into a serving bowl; layer fruit in rainbow order. Serve immediately.
Fruit Topping (as pictured – but the sky’s the limit!)
kiwi, pineapple, mango (peeled and sliced)
mandarin orange (drained)
strawberry (stemmed and sliced)
cherry (stemmed, pitted, and halved)
raspberry, blackberry, blueberry*
*to achieve a “frosted” look, arrange berries in a single layer on a plate and freeze before serving.
