Florida Sunshine Cookie
12 Tbsp unsalted butter, melted (1¾ sticks)
1 cup powdered sugar
½ cup granulated sugar
1 ea egg
½ tsp lemon extract
½ tsp orange extract
½ tsp Pure Vanilla Extract
zest of one lemon
zest of one orange
zest of one lime
½ tsp baking soda
½ tsp cream of tartar
½ tsp Florida Sunshine Spice Blend, ground fine
2 1/8 cups all-purpose flour (or 300g pre-sifted)
1.5 oz Florida Sunshine Sugar, for rolling

2 1/8 cups all-purpose flour (or 300g pre-sifted)
1.5 oz Florida Sunshine Sugar, for rolling
Stir melted butter and sugars until butter is absorbed; stir in egg.
Stir in extracts, zests, baking soda, cream of tartar, and spice blend; fold in flour until just incorporated. Cover and refrigerate for two hours or overnight.
Preheat oven to 350ºF. Add Florida Sunshine Sugar to a small bowl. Line a baking sheet with parchment paper and set aside.
Scoop a walnut-sized portion of cookie dough and roll it between palms to form a smooth ball. Roll in Florida Sunshine Sugar to coat and place on the baking sheet. Repeat with remaining dough; position balls two inches apart. Bake 10 to 12 minutes.
