Sage

Sage is a distinctive aromatic herb that is actually a type of evergreen plant that has velvety leaves tasting of savory with a hint of peppermint. It originated in the Mediterranean but is now widely cultivated throughout the world. Sage needs to be cooked to develop its full flavor for use in enhancing other foods. It is traditionally associated with poultry and turkey, but can be nicely paired with pork, duck, or added to sausage. Sage goes well with onions, eggplant, tomatoes, and potatoes. Sage is often added to stuffing and cheeses. It is popularly used as a salt-free seasoning.
