 Ingredients :

6 large Rome Apples

8 tablespoons Ginger Sugar

3/4 cup heavy cream, well chilled

 
 How to Prepare :
Preheat oven to 400 degrees.  Wash and dry apples.  Core but do not peel and place side by side in shallow baking pan.  Fill each apple with 1 1/2 to 2 teaspoons Ginger Sugar.  Put 1/8 inch water in bottom of pan.  Bake 30 min.  Sprinkle 2 Tbsp Ginger Sugar in bottom of pan and add 1/4 cup water.  Bake 20 minutes. Put cream in chilled bowl.  Add remaining Ginger Sugar and beat with wire whisk until thickened.  Remove apples from pan and loosen carmelized sugar to make a thin caramel sauce.  Reduce over high heat if needed.  Spoon sauce over apples, then spoon on cream.  Serve warm.
