| Fresh or frozen fish of your choosing, filleted or whole. Coastal Blend seasoning Olive Oil Kosher or Sea Salt Cedar Plank |

| How to Prepare : |
|
| Preparing the Cedar Plank: Rinse and then soak a cedar plank in water for at least two hours and up to a day 8 hours works well - the longer the better. Weight down the plank so that it is completely submerged. As an option, you can soak the plank in other water-based liquids like white wine, beer, or apple cider. The soaking ingredients will add an additional flavor of their own, as they gently steam into the entree. Preparing the Fish: Buy or catch some of your favorite fish, salmon is great, and cobia is out of this world - oily fish are best on cedar planks. Lightly rub olive oil on the fish, and then sprinkle all sides with the Coastal Blend seasoning and let sit in the refrigerator for an hour or so. When you are ready to grill, brush the top side of the plank lightly with some olive oil to keep food from sticking and then add a good amount of kosher or sea salt. Place the fish directly on a prepared plank towards the center, skin side down. If you have a lot of fish, push them all together, they’ll actually cook more evenly this way. If the fish has a thick part, and a thin part, overlap the thin parts of two pieces for even grilling. Keep the fish about ¼ inch from the edge of the plank. Grilling the Fish: Preheat your covered grill to a medium-high setting. Place the plank with the fish on the grill and close the lid. Fish cooks in about 15-25 minutes, thinner pieces of fish will take less time than thicker ones. When the fish flakes, it is done. Check the grill often, and keep a water spritzer handy to douse any flames that pop up on the edges of the plank, if necessary. If the planks flare up often, turn down the gas a little or reposition over the charcoal. Note: planked food does not have to be turned during grilling. |
