Various Habaneros have held the title of "hottest pepper in the world" for a long time, the latest being the Red Savina Habanero; however it was recently surpassed by the Naga Jolokia of India. It is by far the hottest commercially-available pepper in the Western world .The Habanero is a small chile that is two inches or less in length with a color that ranges from light green to bright orange, red, yellow, or brown. Native to Caribbean regions, the Yucatan area of Mexico, and northern coastal areas of South America, the Habanero Pepper has subtle fruit flavors that combines well with recipes containing fruit or tomato ingredients. Many times hotter than the jalapeņo, the Habanero has the highest amount of capsaicin or heat-causing substance of all chiles. Caution is urged when using or preparing this pepper to keep the alkaloid (capsaicin) from being transferred to the eyes if cutting into and through the walls of this chile. Beyond the heat element, the pepper has a deep earthy flavor that can be used in various ways, including as a meat rub.
