Other than the Jalapeno, the Ancho/Poblano is one of the best known chili peppers used in Mexican and Southwestern cuisine. "Ancho" refers to the dried version of the "Poblano" pepper (similar to "chipotle" being the smoked version of a jalapeno). Relatively mild to medium in heat, it has a deep rich flavor, which is sometimes described as having nuances of raisin or coffee.
